Cinco de Mayo

Today is Cinco de Mayo and everyone seems to be talking about all the yummy food they planned to make in celebration of today.  I wanted to make a yummy Mexican dish to go along with the festivities.  I didn't have anything specific in mind, so this is a variation of a recipe a got from a friend.  Again this recipe doesn't have any specific measurements.
Cheesy Chicken and Rice (with a kick)
3-4 boneless chicken breasts
1 can cream of chicken
1 can milk
1 can mushrooms
Sliced black olives to taste
Dried minced onions
red pepper flakes
pepper to taste
garlic powder to taste
2 C. minute rice
1 pkg. cheddar cheese

Grease a 9x13 pan.  Place chicken in pan.  Mix the rest of the ingredients together and poor over chicken.  Top with cheese.  Cover pan with aluminum foil.  Bake at 350 degrees for 45 minutes or until chicken is cooked through. 

This is a very filling meal.  Luke really enjoyed it and is happy to have leftovers for lunch.  Hope you all enjoyed your Cinco de Mayo, whether you celebrated or not.
